Discover the Taste of Ancient Wheats!

Nowadays, there is growing interest in natural foods, sustainable farming methods, and the rediscovery of ancient foods and flavors, including forgotten grain varieties. Although we do not yet see ancient grain flours on the shelves of stores on a daily basis, it is worth taking a look around, because ancient wheats have beneficial nutritional effects thanks to their high content of bioactive compounds, favorable gluten composition, and rich mineral content.

Since 2015, the ÖMKi Research Institute of Organic Agriculture has been involved in cultivating local varieties of einkorn and emmer wheat under organic conditions, conducting quality testing, and developing products. We not only conduct research, but also create recipes, and now show you what kind of healthy delicacies you can make by replacing regular wheat flour with einkorn or emmer flour.

Our recipes are designed to be tried and enjoyed by everyone — whether they follow a vegetarian, vegan, traditional omnivorous, or the latest planetary health flexitarian diet. That’s why each recipe offers ingredient alternatives, so everyone can choose what best fits their own preferences or dietary lifestyle.

We recommend our culinary compendium of 46 recipes to all curious and adventurous readers who wish to explore and preserve the rich flavours and values of ancient grains, and who are passionate about both traditional Hungarian and international cuisine.
